I find that starting myself off right in the morning gets me psyched for the rest of the day. When I get to work, I usually head straight for the kitchen. I make myself a drink that consists of warm water, lemon, and honey and a piece of toast. I keep my toast pretty simple. Butter and jam is my go to, but sometimes I use peanut butter or nutella. Toast is my preferred breakfast because it’s healthy, and it fills me up enough to hold me over until lunch. But I feel like sometimes it does get a tad tiring eating the same thing over and over, so I came up with a few tasty but simple recipes to amp up my toast game.
Avocado Toast
Ingredients
1 piece of wheat bread (toasted)
1/2 avocado
1/2 tomato (sliced)
1/4 teaspoon red pepper flakes
salt and pepper to taste
Instructions
Toast the bread until it’s golden brown. This will help the bread hold together after you put the toppings on top. Spoon out the avocado and crush it onto the toast. Sprinkle the red pepper flakes, salt, and pepper on top. Finally, layer on the tomato slices.
Spinach Mushroom Toast
Ingredients
1 piece of toast
1 teaspoon olive oil
8 cremini mushrooms (thinly sliced)
1 teaspoon onion salt
1 teaspoon pepper
2 cups spinach
2 tablespoons burrata
Instructions
Toast the bread until it’s golden brown. This will help the toast to hold together after you put the toppings on top. In a small pan, cook the mushrooms over medium heat with a teaspoon of oil. Add in the onion salt and pepper. Once the mushrooms start to turn brown, add in the spinach and cook for two minutes. Remove the mushroom and spinach mixture from the heat. Smear the burrata over the toast. Spoon the mushroom and spinach mixture over the burrata.
Fig & Prosciutto Toast
Ingredients
1 piece of toast
2 tablespoons burrata
1 fig (thinly sliced)
1 piece of prosciutto
Instructions
Toast the bread until it’s golden brown. This will help the toast to hold together after you put the toppings on top. Smear the burrata on the toast. Place the figs and prosciutto on top of the burrata.
